Tasting Notes
Bright pale straw. An unmistakably Muscat nose: orange blossom, white grape, honeysuckle and fresh lychee. Off-dry on the palate but never cloying — the residual sweetness is held in check by clean citrus acidity, closing light, floral and refreshing.
Food Pairing
Spicy Asian dishes, mild blue cheese, fruit tarts and light desserts — or chilled on its own on a hot afternoon.
Winemaking Method
Cool fermentation in stainless steel, halted while a little natural grape sugar remains — the dömi-sek (demi-sec) style. No oak, nothing to get between you and the Muscat aromatics.
The Story
Bornova Misketi is one of the oldest aromatic grapes still in cultivation, and one of the most purely Turkish — a Muscat that took root around İzmir and never left. Most of the portfolio is dry; this one is not, and unapologetically so. Off-dry wine is where a great many people actually start, and there is no shame in a bottle that smells like a flower shop and makes a table smile.

Tadım Notları
Parlak açık saman rengi. Yanılmaz bir Misket burnu: portakal çiçeği, beyaz üzüm, hanımeli ve taze liçi. Damakta dömi-sek ama asla ağır değil — kalıntı şekeri temiz bir narenciye asidi dengeliyor; hafif, çiçeksi ve ferahlatıcı bir bitişle kapanıyor.
Yemek Eşleşmesi
Baharatlı Asya mutfağı, yumuşak küflü peynirler, meyveli tartlar ve hafif tatlılar — ya da sıcak bir öğleden sonra tek başına, iyice soğutulmuş.
Yöntem
Çelik tankta düşük sıcaklıkta fermantasyon, doğal üzüm şekerinin bir kısmı kalırken durduruluyor — dömi-sek stili. Fıçı yok; sizinle Misket aromaları arasına giren hiçbir şey yok.
Hikâye
Bornova Misketi, hâlâ yetiştirilen en eski aromatik üzümlerden biri ve en Türk olanlarından: İzmir çevresinde kök salmış, bir daha da ayrılmamış bir Misket. Portföyün büyük bölümü kuru; bu değil, üstelik bunun özrünü de dilemiyoruz. Pek çok insanın şarapla tanışması dömi-sek bir kadehle başlıyor ve çiçekçi dükkânı gibi kokan, sofrayı güldüren bir şişede utanılacak hiçbir şey yok.
